Peach Caprese Salad


One of my favourite things about summer is the endless bounty of fresh produce. Summer offers us an exciting opportunity to mix things up in the kitchen and focus on fresh, local produce that is high in nutritional value.

When it’s hot outside, I like to cool down after a long day with fresh summer salads. This peach caprese salad made up of summer peaches, tomoates, basil (and watermelon if you’re feeling up for it!) is one of my favourites.

Ingredients

  1. 6 ounce ball of fresh mozzarella, sliced thick (6 pieces)

  2. 1 ripe peach, sliced thick (6 pieces)

  3. 1 ripe tomato, sliced thick (6 pieces)

  4. 5-8 slices of fresh waterlemon (optional)

  5. 15-20 basil fresh basil leaves

  6. 2 tablespoons olive oil

  7. 2 tablespoons balsamic vinegar

  8. sea salt and fresh cracked pepper to taste

Instructions

  1. Slice the cheese, fruits and vegetables.

  2. Layer half the peaches, tomatoes, mozzarella and basil on a plate. Fan out in a circle. Repeat for the second plate.

  3. Drizzle each plate with half of the olive oil and balsamic.

  4. Salt and pepper to taste.
